Coconut Quinoa Curry Recipe

Not only is my Coconut Quinoa Curry recipe an ideal choice for increasing protein, calcium and iron in your diet, but it’s great as leftovers for lunch the next day. Ingredients
1 can coconut milk
1 cup quinoa cooked
1 large onion diced
4 cloves garlic chopped
2 tblsp curry powder
2 tblsp cilantro/basil & rosemary chopped
1 can corn
6 potatoes diced, (3 sweet)
additional optional ingredients
Juice of 1/2 lemon
1 large tomato diced
1/4 cup crushed cashews
1 tblsp tahini
1 tblsp mustard
2 tblsp ginger grated
1/2 zucchini diced
1 broccoli stock diced
1 cup spinach
How to Prepare
Cook potatoes on their own for 15 minutes in boiling water. Cook quinoa separately as well for 15 minutes (simmering). Place all other ingredients into a large pot and simmer for 20 minutes. Add cooked quinoa and potatoes and let simmer for an additional 10 minutes.
